Mmmm Apple and Cranberry Strudel, hows this for a mouth watering and delicious treat, wink, wink:

100g butter

1 cup fresh or dried Cranberries

3 tablespoons walnuts, roughly chopped

2 tablespoons ground almonds

125g castor sugar

1 teaspoon ground cinnamon

5 granny smith apples

8 sheets filo pastry


Directions:

Preheat oven to 180ºC.

Melt butter and set aside to cool.

Mix cranberries, walnuts, almonds, sugar and cinnamon in a bowl.

Add 2 tablespoons of reserved melted butter and stir well.

Grate the apples, squeeze out excess moisture, then mix with the fruit and nut mixture.

Brush one sheet of pastry with melted butter.

Layer each sheet in turn on top, brushing each with melted butter.

Arrange the apple mixture along the length of the pastry 5 cm in from the ends.

Roll the pastry into a log shape, tucking in the ends as you work. Brush the last edge of pastry with butter and seal.

Place the roll with the joined side down on a greased baking tray and brush the top with remaining melted butter.

Bake for 30–40 minutes until crisp and golden.

If you want to dust with icing sugar and serve with cream or ice cream, go for it.

Preparation Time: 35 minutes

Cooking Time: 30–40 minutes....
